These Nachos are essentially a deconstructed Scrounge taco, and they are killer!
The sweet potato chips and heirloom chips give these nachos such a unique taste and they’re much healthier than tortilla chips, so you can feel great about eating them. These Jackson's Honest chips are made with coconut oil which literally makes them melt in your mouth, but are still crip enough to use as nacho chips! I'm obsessed!
With Memorial Day weekend around the corner, this is a great recipe to make for friends and family and impress them with these Scrounge Nachos that are healthy and still taste delicious!
Ingredients:
3 handfuls Arugula - or any lettuce you have
2 Avocados
1 grilled salmon filet - or use whatever your favorite protein is (i.e. chicken, steak, etc.)
3-4 tbsp pico de gallo - or salsa
3-4 tbsp crumbled goat cheese
1/2 lime (optional)
Garlic powder
S&P
Smoked Paprika (optional)

In a small bowl, smash avocados like you're making gauc, then add some s&p and garlic powder and mix all together
On a large serving platter or plate, layer sweet potato chips and heirloom potato chips
In this order, top chips with the following: arugula/lettuce, guac, salmon, pico de gallo/salsa, goat cheese
To top it off, squeeze a slice of lime and sprinkle with smoked paprika
Dig in!
The Scrounge:
If you don't have these exact ingredients, Scrounge with the things you have at home! For example, if you don't 'have these exact chips – use whatever chips you have at home. If you don't have arugula – use shredded lettuce, romaine or whatever lettuce you have at home, or do without. If you don't have pice de gallo – use a chopped up tomatoe. If you don't have or don't like salmon – use another protein chicken, steak, ground meat, etc. You may create something even better!
