I decided to spice up my plain white rice by making it coconut rice! And let me tell you it's delicious! I still love my plain white rice that I make with bone broth and grass fed butter but this recipe is now on rotation in our house.
Did you know that if you’re dealing with gut inflammation, digestive issues, or sensitivities, WHITE RICE is the better choice because it's gentle and less likely to cause irritation.
White rice has the bran and germ removed, making it lower in fiber and easier on the digestive system.Â
If you’re not dealing with gut issues, brown rice is a great choice! Brown rice retains its bran and germ layers, making it a good source of insoluble fiber, which helps with bowel regularity and can feed beneficial gut bacteria.Â
I have not tried this recipe with brown rice, so let me know if you give it a try!Â

Ingredients:
1 c. white basmati rice (can also use jasmine rice)
1 c. full fat coconut milk
1/2 cup filtered water
pinch of sea salt
Optional: chopped cilantro or parsley
Directions:
Combine rice, milk, water and salt into a deep skillet or pot
Bring to a boil
Once boiling cover and set to simmer for about 5 mins.
Once the 5 mins is up, turn off the heat, leave covered and let sit for another 10 mins.
Fluff with fork and enjoy!
Optional: can add chopped cilantro or parsley to riceÂ
