Pumpkin Pecan Date Bites (gluten free & vegan)

These might be my new fave fall dessert! They are the perfect pumpkin treat made with real, whole, foods so you can feel good about eating these bites! The pumpkin paired with the nuts and chocolate chips gives these the perfect sweet and salty flavor. Enjoy and be sure to tag me on Instagram if you make these!

T h e S c r o u n g e

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!

  • If you don't have raw pecans, try raw cashews, pepitas or raw walnuts

  • If you don't have almond butter, use cashew butter or do without

  • If you don't have unsweetened coconut flakes, do without

  • If you don't have vanilla extract, use do without

  • If you don't have maple syrup, use honey

  • If you don't have pumpkin pie spice, use nutmeg or do without

  • If you don't have cinnamon, use more pumpkin pie spice

  • if you don't have dark chocolate chips, use any chocolate chip, cocoa nibs or do without



I n g r e d i e n t s

1 cup pitted dates (soak in hot water for 10 minutes to soften)

1/2 cup raw pecans

2 tbsp almond butter

1/3 cup canned pumpkin puree

1/4 cup unsweetened coconut flakes

1 tsp vanilla extract

1 tsp pure maple syrup

1 tsp pumpkin pie spice

1/2 tsp cinnamon

1 pinch sea salt

1/2 cup dark chocolate chips

1-2 cups chopped pecans (for rolling balls)



D i r e c t i o n s

Using a high powered blender ( I used my Vitamix) or a food processor blend 1/2 cup pecans until finely ground.


Add dates, almond butter, pumpkin puree, coconut flakes, vanilla, maple syrup, pumpkin pie spice, cinnamon, and sea salt and blend until smooth.


Place in a bowl and mix in chocolate chips.


Refrigerate for at least 30 minutes.


Chop peans into tiny pieces or place in blender to finely ground if desired.


Roll the dough into balls and then roll in pecan pieces to cover the outside of the balls.


Store in refrigerator.
